We love our customer Mother Clucker here at Proper Oils, not just for their great name, or their superb fried chicken, but for their wheels too – a US Army ambulance turned food truck. Fantastic recycling there. Reviewed by everyone from Zagat to Conde Nast Traveller, they’ve been frying chicken and motoring around since March of 2013, serving everywhere from pop-ups in pubs to festivals like Field Day and foodie events like Street Feast. We had a quick catch up with co-founder Ross Curnow to spread the Mother Clucking word:
Hello Mother Clucker, you serve fried chicken from a converted US Army ambulance. Just where did that idea come from?
We hatched out of a bit of a joke really. Brit [Brittney Bean, co-founder] is from New Orleans, so usually had a craving for homestyle fried chicken. She was working on a 100% perfect recipe and I was her loyal lab rat for testing. It obviously was quite good and I decided we should sell it. With no experience in food she replied ‘NO WAY’, then I said we should call it Mother Clucker and she agreed it’d be rude not too. The rest is kind of a grease-filled blur.
What’s your signature dish?
The 24hr brined twice battered buttermilk fried chicken.
Where can we find Mother Clucker this summer?
We’re at The Truman Brewery 7 days a week. We’re at Kerb West India Quay every Wednesday and Thursday and Kerb King Cross every Friday. We’re also at Street Feast Lewisham every Friday and Saturday in August. There’s a couple of other bits in the pipeline too… So we’re a bit busy. Yeah. I better get back to work haha! AAAAAGGGH.
What did you do in a previous life to get where you are now?
I was a drummer. There is absolutely no correlation to where I am now, hahah.
Any tips for budding mobile chefs out there on running a successful food truck?
Be nice to everyone, stay humble, work on systems, care about your staff, enjoy beers.
Best meal you’ve ever had?
Chicken is great, but do you eat your greens too?
Course! Chicken is a vegetable right?!
