Sustainable Restaurant Association Discerning Diners reportCustomers will pay more for your food if you can demonstrate you operate as a sustainable catering business.

A report produced by the Sustainable Restaurant Association (SRA) considers consumer attitudes towards sustainability in restaurants. Its findings suggest that customers value those who can demonstrate environmental credentials, and are prepared to pay for it.

Food waste was considered one of the three most important factors along with local sourcing, and health & nutrition. A meagre 6% of diners felt that restaurants communicated what they were doing about food waste.

An opportunity to review your value?

By letting your customers know about your sustainable activities adds value to your service and this in turn could be translated to higher prices on your menu.

Almost half (43%) of those asked said they would be prepared to pay up to ten per cent more for their meal in a sustainable restaurant, and an investment in sustainability is one way of attracting new customers and retaining existing ones.

But it’s not just for caters who offer a menus at a higher price

Where there is less room for manoeuvre on margins, there are still clear benefits to promoting a sustainable policy within even the smallest of catering operations. You may not be in a position to rise your prices, but by showing off your green credentials (such at recycling cooking oils with Proper Oils) may give you the edge over your competitors.
